Sushi Rolls with Brown Rice, Avocado, Cucumber, and Crab
These sushi rolls are a delightful and healthier twist on traditional sushi, featuring nutty brown rice combined with fresh avocado, crisp cucumber, and tender crab. Perfect for a fun meal at home or an impressive appetizer, they offer a burst of flavors and textures in every bite.
Ingredients
• 1 cup brown rice, rinsed
• 1 1/2 cups water
• 1 tablespoon rice vinegar
• 1 tablespoon sugar
• 1/2 teaspoon salt
• 4 sheets nori (seaweed)
• 1 avocado, sliced
• 1 cucumber, julienned
• 1 cup cooked crab meat (imitation or real)
• Soy sauce for dipping
• Pickled ginger and wasabi for serving (optional)
Instructions
1. In a saucepan, combine the rinsed brown rice and water, bringing to a boil. Reduce the heat, cover, and simmer for about 40-45 minutes, or until the rice is tender and water is absorbed.
2. Once cooked, remove from heat and let it sit covered for 10 minutes. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved, then gently fold this mixture into the cooked rice.
3. Place a bamboo sushi mat on a flat surface and lay a sheet of nori on top, shiny side down. Spread a thin layer of brown rice over the nori, leaving about an inch at the top edge.
4. Arrange slices of avocado, cucumber, and crab along the bottom edge of the rice. Using the mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight.
5. Seal the edge of the nori with a bit of water, then slice the roll into bite-sized pieces with a sharp knife.
6. Serve with soy sauce, pickled ginger, and wasabi if desired.
