Spaghetti Squash Topped with Marinara and Turkey Sausage
This spaghetti squash dish offers a deliciously healthy alternative to traditional pasta, featuring tender strands of squash topped with savory marinara sauce and flavorful turkey sausage. Ingredients
• 1 medium spaghetti squash
• 1 lb turkey sausage, casings removed
• 2 cups marinara sauce (store-bought or homemade)
• 1 tablespoon olive oil
• 1 teaspoon Italian seasoning
• Salt and pepper to taste
• Fresh basil or parsley for garnish (optional)
• Grated Parmesan cheese for serving (optional)
Instructions
1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, salt, and pepper, then place cut-side down on a baking sheet. Roast for 35-40 minutes, or until the flesh is tender and easily shredded with a fork.
2. While the squash is roasting, heat a skillet over medium heat and add the turkey sausage. Cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
3. Stir in the marinara sauce and Italian seasoning, allowing it to simmer for a few minutes until heated through.
4. Once the spaghetti squash is done, use a fork to shred the flesh into strands and place it in serving bowls.
5. Top with the turkey sausage and marinara mixture, garnishing with fresh basil or parsley and grated Parmesan cheese if desired.
