Samosas
Samosas are a delicious and savory pastry filled with a spiced mixture of potatoes, peas, and aromatic herbs. Perfect as a snack or appetizer, these crispy treats are often served with chutney or sauce for dipping, making them a favorite at gatherings and celebrations.
Ingredients
• 2 cups all-purpose flour
• 1/2 teaspoon salt
• 1/4 cup vegetable oil
• 1/4 cup water (more if needed)
• 2 medium potatoes, boiled and mashed
• 1/2 cup green peas (fresh or frozen)
• 1 teaspoon cumin seeds
• 1 teaspoon garam masala
• 1/2 teaspoon turmeric powder
• 1/2 teaspoon chili powder (adjust to taste)
• Salt to taste
• Oil for frying
Instructions
1. In a large bowl, mix the all-purpose flour and salt. Add the vegetable oil and rub it into the flour until the mixture resembles coarse crumbs. Gradually add water, kneading until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
2. In a skillet, heat a small amount of oil and add the cumin seeds, cooking until fragrant. Add the mashed potatoes, green peas, garam masala, turmeric, chili powder, and salt. Cook for a few minutes, stirring well, then remove from heat and let the filling cool.
3. Divide the dough into small balls and roll each ball into a thin oval shape. Cut the oval in half to form two semicircles. Take one semicircle, fold it into a cone shape, and seal the edges with a little water.
4. Fill the cone with the potato and pea mixture, then seal the open edge by pinching it together. Repeat with the remaining dough and filling.
5. Heat oil in a deep pan over medium heat and fry the samosas until golden brown and crispy. Drain on paper towels and serve hot with chutney or sauce for dipping.
