Nut Butter Energy Balls

Ingredients
• 1 cup rolled oats
• 1/2 cup nut butter (such as almond, peanut, or cashew)
• 1/4 cup honey or maple syrup
• 1/4 cup chocolate chips or dried fruit
• 1/4 cup chia seeds or flaxseeds
• 1 teaspoon vanilla extract
• A pinch of salt
Instructions
1. In a large mixing bowl, combine the rolled oats, nut butter, honey or maple syrup, chocolate chips or dried fruit, chia seeds or flaxseeds, vanilla extract, and salt
2. Stir until all the ingredients are well combined and form a sticky mixture
3. Use your hands to roll the mixture into small balls, about 1 inch in diameter
4. Place the energy balls on a baking sheet or plate lined with parchment paper
5. Refrigerate for at least 30 minutes to firm up
6. Once set, transfer the energy balls to an airtight container for storage
7. Keep refrigerated for up to one week or freeze for longer storage
