Masala

Masala is a rich and aromatic blend of spices that forms the foundation of many Indian dishes, bringing warmth and depth of flavor to a variety of meals. Whether used in curries, stews, or marinades, this versatile mixture can be customized to your taste, making it a staple in kitchens around the world.

Ingredients

  • 2 tablespoons cumin seeds
  • 2 tablespoons coriander seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon cardamom pods
  • 1 tablespoon cloves
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon cinnamon powder

Instructions
1. In a dry skillet over medium heat, toast the cumin seeds, coriander seeds, black peppercorns, cardamom pods, and cloves for about 2-3 minutes, or until fragrant. Stir frequently to prevent burning.
2. Remove the spices from the heat and let them cool completely. Once cooled, transfer them to a spice grinder or mortar and pestle.
3. Add the turmeric powder, red chili powder, and cinnamon powder to the ground spices. Grind until you achieve a fine powder.
4. Store the masala in an airtight container in a cool, dark place for up to six months. Use it to enhance the flavor of your favorite dishes.
