Green Curry Sauce

This aromatic green curry sauce is a staple in Thai cuisine, bursting with fresh herbs and spices that create a vibrant and flavorful dish. Perfect for pairing with chicken, shrimp, or vegetables, this sauce will transport your taste buds straight to Thailand.

Ingredients
• 1 cup fresh basil leaves, packed
• 1 cup fresh cilantro leaves, packed
• 2-3 green chilies, minced (adjust to taste)
• 1 small onion, chopped
• 3 cloves garlic, minced
• 1 tablespoon fresh ginger, minced
• 2 tablespoons fish sauce
• 1 tablespoon lime juice
• 1 can (13.5 oz) coconut milk
• 1 tablespoon vegetable oil
• Salt to taste

Instructions
1. In a blender or food processor, combine the basil leaves, cilantro, green chilies, onion, garlic, and ginger. Blend until smooth, adding a little water if necessary to help blend.
2. In a medium saucepan, heat the vegetable oil over medium heat.
3. Add the blended herb mixture to the saucepan and cook for about 2-3 minutes, stirring frequently, until fragrant.
4. Stir in the fish sauce and lime juice, mixing well to combine.
5. Pour in the coconut milk and bring the sauce to a simmer.
6. Let the sauce cook for an additional 10-15 minutes, stirring occasionally, until it thickens slightly.
7. Season with salt to taste, adjusting the flavors as desired.
8. Serve over your choice of protein or vegetables, or use as a base for a delicious green curry dish. Enjoy!
