Fluffy Pancakes

These fluffy pancakes are easy to make and perfect for a delicious breakfast or brunch. Light and airy, they can be topped with maple syrup, fresh fruit, or your favorite toppings for a delightful morning treat!

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or regular milk with 1 tablespoon vinegar added)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (plus more for cooking)
  • 1 teaspoon vanilla extract (optional)

Instructions

1. Preheat a non-stick skillet or griddle over medium heat. If you have a griddle, set it to about 375°F (190°C).

2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

3. In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract (if using). Whisk until smooth.

4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

5. Lightly grease the skillet or griddle with a small amount of butter. Pour about 1/4 cup of batter for each pancake onto the heated surface. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.

6. Remove the pancakes from the skillet and keep warm while you cook the remaining batter.

7. Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh berries, sliced bananas, or whipped cream. Enjoy your fluffy pancakes!
