English Muffins

English muffins are delightful, toasted bread that are perfect for breakfast or brunch, often served with butter and jam. With their signature nooks and crannies, they are ideal for holding toppings, making them a versatile addition to any meal.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup warm milk (about 110°F/43°C)
  • 2 tablespoons melted butter
  • Cornmeal for dusting

Instructions
1. In a large bowl, combine the all-purpose flour, whole wheat flour, instant yeast, salt, and sugar. In a separate bowl, mix the warm milk and melted butter, then add to the dry ingredients.
2. Stir until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
3. After the dough has risen, punch it down and roll it out to about 1/2 inch thickness. Use a round cutter to cut out circles and place them on a baking sheet dusted with cornmeal.
4. Cover the muffins with a cloth and let them rise again for about 30 minutes. Preheat a griddle or skillet over medium heat and cook the muffins for 5-7 minutes on each side until golden brown and cooked through.
5. Allow the muffins to cool slightly before slicing and toasting, serving them with your favorite spreads or toppings.
