Grits are a classic Southern dish made from ground corn, typically served as a side or a base for various toppings. This creamy grits recipe is rich and comforting, perfect for breakfast, lunch, or dinner.
Ingredients
• 1 cup stone-ground grits (not instant)
• 4 cups water (or a mix of water and milk for creamier grits)
• 1 teaspoon salt
• 2 tablespoons unsalted butter
• 1 cup sharp cheddar cheese (or your choice of cheese), grated (optional)
• Freshly ground black pepper, to taste
• Optional toppings: sautéed shrimp, crumbled bacon, green onions, or fried eggs
Instructions
1. In a medium saucepan, bring the water (or water and milk mixture) to a boil. Add the salt.
2. Gradually whisk in the stone-ground grits, ensuring there are no lumps. Reduce the heat to low and cover the saucepan.
3. Cook the grits, stirring frequently, for about 20-25 minutes. If the grits begin to thicken too much, you can add a little more water or milk to reach your desired consistency. The grits should be creamy and tender.
4. Once the grits are cooked, remove them from the heat. Stir in the unsalted butter until melted and creamy. If you’re using cheese, add it at this stage and stir until fully melted and combined. Adjust the seasoning with salt and freshly ground black pepper to taste.
5. Serve the creamy grits hot, either as a side dish or as a base for your favorite toppings.
