Ceviche is a refreshing dish made from fresh raw fish or seafood that is "cooked" in citrus juice. This classic ceviche recipe features shrimp, lime juice, and fresh vegetables for a bright and zesty flavor. It’s perfect as an appetizer or light meal!
Ingredients
• 1 pound raw shrimp, peeled and deveined (or other firm white fish like tilapia or snapper)
• 1 cup fresh lime juice (about 6-8 limes)
• 1 small red onion, finely chopped
• 1-2 jalapeño peppers, seeded and finely chopped (adjust to your heat preference)
• 1 tomato, diced
• 1/2 cucumber, diced (optional)
• 1/4 cup fresh cilantro, chopped
• Salt, to taste
• Black pepper, to taste
• Tortilla chips or plantain chips, for serving
Instructions
1. Prepare the Shrimp:
If using shrimp, chop them into small pieces (about 1/2-inch) and place them in a glass or non-reactive bowl. If using fish, cut it into small cubes.
2. Marinate in Lime Juice:
Pour the fresh lime juice over the shrimp (or fish), ensuring that it is completely submerged. Cover the bowl with plastic wrap and refrigerate. Allow the shrimp to marinate for about 30-60 minutes, or until the shrimp turns pink and opaque (the fish will also change color).
3. Prepare the Vegetables:
While the shrimp is marinating, chop the red onion, jalapeños, tomato, cucumber (if using), and cilantro.
4. Combine Ingredients:
Once the shrimp is "cooked" in the lime juice, drain a little of the excess juice (if desired). Add the chopped vegetables and cilantro to the bowl with the shrimp. Season with salt and pepper to taste. Toss gently to combine.
5. Serve:
Serve the ceviche chilled in small bowls or cups. Accompany with tortilla chips or plantain chips for dipping.
