Cilantro Lime Chicken

Ingredients

  • 1 lb chicken breast
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Black Beans and Corn Salad:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions
1. In a bowl, whisk together the cilantro, lime juice, olive oil, minced garlic, salt, and pepper. Add the chicken breasts to the marinade and let it sit for at least 30 minutes.
2. While the chicken marinates, prepare the black beans and corn salad by combining the black beans, corn, diced bell pepper, red onion, cilantro, lime juice, salt, and pepper in a large bowl. Mix well and set aside.
3. Preheat the grill or a skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
4. Let the chicken rest for a few minutes before slicing. Serve the cilantro lime chicken alongside the black beans and corn salad for a vibrant and delicious meal.
