Cabbage Stir-Fry with Ground Turkey and Vegetables
This cabbage stir-fry is a nutritious and satisfying dish that combines lean ground turkey with a medley of colorful vegetables. Quick to prepare and packed with flavor, it’s a great option for a healthy weeknight meal that the whole family will love.
Ingredients
• 1 lb ground turkey
• 4 cups green cabbage, shredded
• 1 bell pepper, sliced
• 1 carrot, julienned
• 2 cloves garlic, minced
• 1 tablespoon ginger, minced
• 3 tablespoons soy sauce (or tamari for gluten-free)
• 1 tablespoon sesame oil
• 2 tablespoons vegetable oil
• Green onions for garnish (optional)
Instructions
1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
2. Remove the turkey from the skillet and set aside. In the same skillet, add the remaining tablespoon of vegetable oil, garlic, and ginger; sauté for about 30 seconds until fragrant.
3. Add the sliced bell pepper and julienned carrot, stir-frying for about 3-4 minutes until they begin to soften.
4. Stir in the shredded cabbage and continue to cook for another 5 minutes, or until the cabbage is tender.
5. Return the cooked ground turkey to the skillet, add the soy sauce and sesame oil, and stir to combine.
6. Serve hot, garnished with sliced green onions if desired.
