Buffalo Cauliflower Bites

Ingredients
• 1 head of cauliflower, cut into bite-sized florets
• 1 cup all-purpose flour
• 1 cup water
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1 cup buffalo sauce (store-bought or homemade)
• Optional: celery sticks and blue cheese dressing for serving
Instructions
1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, water, garlic powder, onion powder, paprika, salt, and black pepper to create a batter.
3. Dip each cauliflower floret into the batter, allowing any excess to drip off, and place them on the prepared baking sheet in a single layer.
4. Bake for 20-25 minutes, or until the cauliflower is tender and the batter is crispy, flipping halfway through for even cooking.
5. Remove the cauliflower from the oven and toss it in buffalo sauce until well coated. Return to the baking sheet and bake for an additional 5-10 minutes. Serve hot with celery sticks and blue cheese dressing, if desired.
