Ingredients:
- 1 cup burdock root, julienned (about 1 medium burdock root)
- 1 tablespoon apple cider vinegar
- 1 cup carrots, julienned
- 2 tablespoons sesame oil
- 2 cloves garlic, minced (optional)
- 1 tablespoon soy sauce (optional, for added flavor)
- Salt and pepper, to taste
- 2 tablespoons toasted sesame seeds
- Green onions, sliced (for garnish, optional)
#### Instructions:
1. Peel it fresh burdock root, and slice it into thin slivers. Soak the slivers in water with apple cider vinegar while you prepare the other ingredients.
2. Heat the Oil: In a large skillet or wok, heat the sesame oil over medium heat. If using garlic, add it to the pan and sauté for about 30 seconds until fragrant.
3. Sauté the Vegetables: Add the slivered burdock root and julienned carrots to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp. If using soy sauce, drizzle it over the vegetables during the last minute of cooking.
4. Season and Garnish: Remove the skillet from heat and season with salt and pepper to taste. Sprinkle the toasted sesame seeds over the sauté and toss to combine. If desired, garnish with sliced green onions for added freshness.
