Ingredients
- 1 cup roasted pumpkin seeds
- 1/4 cup white rice flour
- 1 tablespoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lb chicken breast or thighs, thawed




Instructions
- Preheat oven to 350o
- To make the breading: Pulse pumpkin seed 3-4 times in a food processor. You can find my recipe for roasted pumpkin seed HERE
- Add rice flour, basil, salt, and pepper
- Dredge the chicken in the breading so both sides generously covered
- Bake the chicken on a baking sheet for 25-30 minute. Flip the chicken after 10 minutes and use the leftover breading to sprinkle over the top. Continue to bake for at least 15 more minutes, until breading is golden brown and crispy.
