Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small red onion, finely chopped
- 1 cup Brie cheese, cut into small pieces
- 1/2 cup pomegranate seeds
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried thyme, plus extra for topping

Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Sauté garlic and onion in olive oil in cast iron (or oven safe) skillet until tender.
- In a bowl, mix together the Brie cheese, pomegranate seeds, parsley, and thyme.
- Add sautéed garlic and onion to the brie mixture
- Sear chicken in skillet for 5 minutes on each side.
- Remove the chicken from heat and butterfly the chicken breasts by slicing them horizontally but not all the way through. Splay open, fill with brie mixture, and pin closed with toothpicks.
- Return the chicken to the skillet and sprinkle with salt, pepper, and thyme.
- Bake in the oven for 30-40 minutes until the chicken is cooked through and the juices run clear (internal temperature should reach 165°F / 75°C).
- Remove the toothpicks or twine from the chicken. Garnish with fresh pomegranate seeds and parsley, if desired.
