Fish Chowder

Ingredients

  • 1 lb haddock
  • 1/2 lb salmon
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb scallops
  • 1 pint cream
  • 1 can evaporated milk
  • 1 stalk celery
  • 1 medium onion
  • 3 medium potatoes, cubed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 quart chicken broth (find my broth recipes HERE and HERE)
  • 3 tablespoons flour

Instructions

  1. Sauté celery and onions briefly in butter
  2. Add potatoes, cut up haddock and salmon, and chicken broth
  3. Simmer 20 minutes
  4. Add shrimp and scallops
  5. Simmer 10 minutes
  6. Add evaporated milk and most of the cream
  7. Use the remaining cream to mix with the flour
  8. Add the flour mixture, salt and pepper.
  9. Simmer until it thickens. Do not boil
