Ingredients:
* 1 large daikon radish, peeled and julienned
* 1 medium carrot, peeled and julienned
* 1 cucumber, julienned
* 1 bell pepper, thinly sliced
* 1 cup fresh herbs (such as mint, cilantro, or basil)
* Rice paper wrappers
* Optional: cooked shrimp, tofu, or chicken for added protein
For the Dipping Sauce:
* 3 tablespoons soy sauce or tamari
* 1 tablespoon rice vinegar
* 1 teaspoon sesame oil
* 1 teaspoon honey or maple syrup (optional)
* Chili flakes or sriracha (optional, for heat)

Instructions:
1. Prepare the dipping sauce by mixing the soy sauce, rice vinegar, sesame oil, honey or maple syrup (if using), and chili flakes or sriracha (if desired) in a small bowl. Set aside.
2. In a shallow dish, fill it with warm water to soften the rice paper wrappers. Dip one wrapper into the water for about 10-15 seconds, or until it becomes pliable.
3. Place the softened wrapper on a clean surface and layer a small amount of julienned daikon, carrot, cucumber, bell pepper, and fresh herbs in the center of the wrapper. If using, add a few pieces of cooked shrimp, tofu, or chicken.
4. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top, ensuring the filling is secure. Repeat with the remaining wrappers and fillings.
5. Serve the daikon spring rolls with the dipping sauce on the side. Enjoy these refreshing and healthy rolls as a delightful appetizer or light meal that celebrates the flavors of fresh vegetables!
