Ingredients
- 1 teaspoon olive oil
- chicken breast
- salt
- black pepper
- 6 flour tortillas (find my homemade wheat flour tortilla recipe HERE)
- 1 can refried beans
- shredded cheddar or jack cheese
- 1 1/2 cups enchilada sauce (find my homemade enchilada sauce recipe HERE)





Instructions
- preheat over to 350o
- heat olive oil in a skillet over medium heat
- place chicken breast in skillet, sprinkle with salt and pepper on both sides and braise until golden brown
- cut chicken into 1 inch by 1/2 inch strips
- drizzle the enchilada sauce to cover the bottom of a 9×9 inch baking pan
- Assemble the enchiladas by placing a row of chicken, refried beans, and shredded cheese down the center of each tortilla then rolling the tortilla tightly
- Pack the tortillas side by side drizzle remaining enchilada sauce over the top of the tortillas
- top with more shredded cheese
- bake for 20 minutes or until starting to brown on top
** can be topped with thinly sliced jalapeno peppers before baking
***top with sour cream and green onions before serving
