Chicken Enchiladas

Ingredients

  • 1 teaspoon olive oil
  • chicken breast
  • salt
  • black pepper
  • 6 flour tortillas (find my homemade wheat flour tortilla recipe HERE)
  • 1 can refried beans
  • shredded cheddar or jack cheese
  • 1 1/2 cups enchilada sauce (find my homemade enchilada sauce recipe HERE)

Instructions

  1. preheat over to 350o
  2. heat olive oil in a skillet over medium heat
  3. place chicken breast in skillet, sprinkle with salt and pepper on both sides and braise until golden brown
  4. cut chicken into 1 inch by 1/2 inch strips
  5. drizzle the enchilada sauce to cover the bottom of a 9×9 inch baking pan
  6. Assemble the enchiladas by placing a row of chicken, refried beans, and shredded cheese down the center of each tortilla then rolling the tortilla tightly
  7. Pack the tortillas side by side drizzle remaining enchilada sauce over the top of the tortillas
  8. top with more shredded cheese
  9. bake for 20 minutes or until starting to brown on top

** can be topped with thinly sliced jalapeno peppers before baking

***top with sour cream and green onions before serving
