This vibrant salad combines the crispness of watermelon radish with the sweetness of carrots, enhanced by a nutty sesame dressing. Perfect as a side or a light snack, it adds a burst of color and flavor to any table.

Ingredients:
- 1 medium purple daikon
- 1 medium radish
- 2 large carrots
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon soy sauce
- 1 teaspoon honey or maple syrup
- 1 teaspoon sesame seeds
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions:
1. Using a vegetable peeler or mandoline, thinly slice the daikon, radish and carrots into long ribbons.
2. In a large bowl, combine the ribbons.
3. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey or maple syrup, sesame seeds, salt, and pepper.
