Ingredients:
- 14 oz (400g) firm tofu, drained and pressed
- 2 medium carrots, julienned
- 1 cup broccoli spears
- 1 medium onion, sliced (yellow or red)
- 3 cloves garlic, minced
- 2 tablespoons sesame oil
- 2 tablespoons tahini
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar (optional)
- 1 tablespoon water (adjust for consistency)
- 2 green onions, chopped (for garnish)
- 2 tablespoons sesame seeds (for garnish)
- Salt and pepper to taste
- 8 oz (225g) Udon noodles
Instructions:
- Prepare the Udon Noodles: Cook the Udon noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
- Cut the pressed tofu into bite-sized cubes. In a non-stick skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of sesame oil. Add the onion, carrots, and broccoli. Stir-fry for about 3-4 minutes until they begin to soften. Add the minced garlic and stir-fry for an additional 1-2 minutes, until fragrant.
- Combine Tofu and Noodles: Return the cooked tofu to the skillet with the vegetables. Add the cooked udon noodles, tahini, soy sauce, rice vinegar (if using), and water. Toss everything together gently until well combined and heated through, about 2-3 minutes. Adjust the seasoning with salt and pepper to taste.
