Tahini

Tahini is a creamy, nutty paste made from ground sesame seeds, commonly used in Middle Eastern cuisine. It’s not only a key ingredient in dishes like hummus and baba ghanoush but also serves as a versatile condiment and dressing.

Ingredients:

  • 1 cup sesame seeds
  • 1-2 tablespoons neutral oil (such as grapeseed or sunflower oil)
  • Pinch of salt (optional)

Instructions:

1. Toast the Sesame Seeds: In a dry skillet over medium heat, toast the sesame seeds for about 3-5 minutes, stirring frequently, until they are lightly golden and fragrant. Be careful not to burn them.

2. Blend the Seeds: Transfer the toasted sesame seeds to a food processor. Blend on high speed, scraping down the sides as needed, until the seeds turn into a thick paste.

3. Add Oil and Salt: Gradually add 1-2 tablespoons of neutral oil and a pinch of salt (if using) while blending until the tahini reaches your desired consistency—smooth and creamy.

4. Store: Transfer the tahini to an airtight container and store it in the refrigerator for up to a month. Stir well before each use, as the oil may separate over time.
