
Ingredients
- 1 medium butternut squash, peeled, seeds removed, and cubed
- 3 medium beets, cubed
- 3 medium carrots, cubed
- 2 parsnip, cubed
- 1 medium onion, chopped
- 1/2 bunch of kale, chopped
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 3 tablespoons sage
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 350o
- Combined all ingredients
- Bake for 30-40 minutes
