Roasted Winter Vegetables

Ingredients

  • 1 medium butternut squash, peeled, seeds removed, and cubed
  • 3 medium beets, cubed
  • 3 medium carrots, cubed
  • 2 parsnip, cubed
  • 1 medium onion, chopped
  • 1/2 bunch of kale, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons sage
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350o
  2. Combined all ingredients
  3. Bake for 30-40 minutes
