Ingredients:
- 3 cups flour
- 1 teaspoon salt
- 2 tablespoons olive oil
- 5 eggs
- 2 cups ricotta cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs
- 1 large bunch spinach
- 5 cloves minced garlic
- 1 tablespoon olive oil
The Dough:
Combine 3 cups of flour with 1 teaspoon salt. Drizzle in 2 tablespoons of olive oil and mix thoroughly. Add 5 eggs and knead until thoroughly combined. The dough should be the consistency of playdough. If its too sticky dust in more flour a little at a time. If its too stiff, add more eggs.

The Filling:
In a bowl combine 2 cups of ricotta cheese with half a teaspoon of salt, half a teaspoon of black pepper, and 2 eggs.

In a pan combine 1 large bunch of spinach, 5 cloves of minced garlic, and 1 tablespoon of olive oil. Sauté until spinach is wilted.

Roll out 1/3 of the dough. Add spinach mixture to ricotta mixture and place 1 heaping tablespoon of this mixture approximately 1 inch apart on the lower half of the dough.

Fold the dough over and cut into squares around each of the ricotta/spinach heaps.

Use the tines of a fork to press together the edges of each square.

Boil water in a large pot. Place each square in the boiling water approximately 5 minutes until they easily float on the top. Scoop the boiled ravioli squares into a colander to strain.
