Quinoa and Black Bean Bowl

This quinoa and black bean bowl is a nutritious and colorful dish that brings together wholesome ingredients for a satisfying meal. Topped with creamy avocado and zesty salsa, it’s a perfect option for a quick lunch or a light dinner that’s both filling and refreshing.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water (find my broth recipes HERE and HERE)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1 cup salsa (find my salsa recipe HERE)
  • Fresh cilantro for garnish (optional)

Instructions
1. In a saucepan, combine the quinoa and vegetable broth or water, bringing to a boil. Reduce the heat, cover, and simmer for about 15 minutes, or until the quinoa is cooked and fluffy.
2. In a large bowl, combine the cooked quinoa, black beans, corn, diced red bell pepper, cumin, chili powder, salt, and pepper, mixing well to combine.
3. Divide the quinoa and black bean mixture into serving bowls.
4. Top each bowl with sliced avocado and a generous spoonful of salsa.
5. Garnish with fresh cilantro if desired before serving.
