Pumpkin Spice Cupcakes

Ingredients:

  • 2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup unsalted butter, melted
  • 4 large eggs
  • 1 cup pumpkin puree (canned or fresh)
  • 1 teaspoon vanilla extract

For the cream cheese frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (as needed for consistency)

Instructions:
1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
3. In a large mixing bowl, combine the granulated sugar, brown sugar, and butter, mixing until well combined.
4. Add the eggs one at a time, mixing well after each addition. Then stir in the pumpkin puree and vanilla extract.
5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
7. Bake for 20-35 minutes, or until a toothpick inserted in the center comes out clean.
8. Allow the cupcakes to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
9. While the cupcakes are cooling, prepare the cream cheese frosting by beating the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined. If needed, add milk to achieve the desired consistency.
