Ingredients
- 1 sheet of puff pastry (find my puffed pastry recipe HERE)
- 1 cup Brie cheese, cut into small cubes
- 1/2 cup pomegranate seeds
- 1 egg (for egg wash)
- 1 tablespoon fresh rosemary or thyme, chopped (optional)
- Salt and pepper to taste
- Honey or balsamic glaze for drizzling (optional)

Instructions
1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Prepare the Puff Pastry:
– On a lightly floured surface, roll out the puff pastry sheet to smooth out creases.
– Cut the pastry into squares (about 3×3 inches).
3. Assemble the Bites:
– Place a cube of Brie cheese in the center of each puff pastry square.
– Top the Brie with a few pomegranate seeds and a sprinkle of fresh herbs (if using).
– Season with a pinch of salt and pepper.
4. Fold the Pastry:
– Fold the corners of the puff pastry square over the filling to create a little bundle.
– Pinch the edges to seal the bites securely.
5. Egg Wash:
– In a small bowl, beat the egg to create an egg wash.
– Brush the tops of the pastry bites with the egg wash for a golden finish.
6. Bake:
– Place the prepared bites on the lined baking sheet.
– Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed.
7. Serve:
– Remove from the oven and let cool slightly.
– Drizzle with honey or balsamic glaze if desired for added sweetness.
– Garnish with additional pomegranate seeds for a pop of color.
8. Enjoy: Serve warm as a delightful appetizer at your next gathering!
These Pomegranate and Brie Bites are sure to impress your guests with their rich flavors and beautiful presentation!
