These delicious pizza pockets are the perfect snack or meal for any pizza lover. With a flaky puff pastry exterior and gooey mozzarella and sauce inside, they are sure to be a hit!

Ingredients
- Puffed pastry, rolled out (find my puffed pastry recipe HERE)
- Pizza sauce
- Mozzarella cheese, shredded
- Egg, for washing
- Parchment paper
Instructions
1. Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
2. Roll out the puffed pastry and slice it into 2-3 inch wide strips.
3. Place a spoonful of pizza sauce and a sprinkle of mozzarella cheese on one side of each strip.
4. Fold the pastry over to cover the filling and crimp the edges with a fork to seal.
5. Brush the tops of the pockets with beaten egg to give them a golden color when baked.
6. Arrange the pockets on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
7. Allow to cool slightly before serving and enjoy your homemade pizza pockets!
*Optional: consider adding pepperoni, mushrooms, or other pizza toppings to the filling
