
Ingredients
- 2 medium beets
- 1 cup apple cider vinegar
- 1 cup water
- 1 dozen hard boiled eggs
Instructions
- Slice beets, and combine with the vinegar and water in a sauce pan
- Simmer until slightly tender
- Peel eggs and place in large jar
- Pour beet mixture into jar and cover jar loosely with lid
- Place jar in the refrigerator overnight
- Enjoy as a stand alone snack or use the eggs to make a delicious egg salad sandwich
