Pickled Eggs and Beets

Ingredients

  • 2 medium beets
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 dozen hard boiled eggs

Instructions

  1. Slice beets, and combine with the vinegar and water in a sauce pan
  2. Simmer until slightly tender
  3. Peel eggs and place in large jar
  4. Pour beet mixture into jar and cover jar loosely with lid
  5. Place jar in the refrigerator overnight
  6. Enjoy as a stand alone snack or use the eggs to make a delicious egg salad sandwich
