Omelet with Bell Peppers, Onions, and Mushrooms

Ingredients:

  • 3 large eggs
  • 1/4 cup bell peppers, diced (any color)
  • 1/4 cup onion, diced
  • 1/4 cup mushrooms, sliced
  • 1/4 cup cheddar cheese, shredded
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or chives) for garnish (optional)

Instructions:

1. In a bowl, whisk the eggs and season them with salt and pepper.
2. Heat the olive oil or butter in a non-stick skillet over medium heat.
3. Add the diced bell peppers, onions, and mushrooms to the skillet, sautéing for about 3-4 minutes until they are softened.
4. Pour the whisked eggs into the skillet, making sure they evenly cover the vegetables. Sprinkle cheese evenly over eggs. Cook for about 2-3 minutes, or until the edges begin to set.
5. Using a spatula, gently lift the edges of the omelet to allow any uncooked eggs to flow underneath. Cook until the eggs are set to your liking, about another 2-3 minutes.
6. Carefully fold the omelet in half and slide it onto a plate.
