Ingredients:

- 1 medium butternut squash, peeled and diced
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1/2 cup grated Gruyère or Parmesan cheese (optional)
- 1 egg, beaten (for egg wash)




Instructions:
1. Preheat the Oven: Preheat your oven to 400°F (200°C).
2. Roast the Butternut Squash: In a bowl, toss the diced butternut squash with 1 tablespoon of olive oil, salt, pepper, and thyme. Spread the squash on a baking sheet and roast for about 20-25 minutes, or until tender and slightly caramelized. Remove from the oven and let cool slightly.
