Enchilada Sauce

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons flour
  • 2 cloves of garlic minced
  • 4 tablespoons chili pawder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 2 cups chicken broth (find my broth recipes HERE and HERE)
  • 1/4 cup tomato paste

Instructions

  1. In a thick pan fry oil and flour, stirring continually until flour browns to the color of a copper penny
  2. add garlic and fry lightly
  3. add all other ingredients and simmer for 5-7 minutes
