  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Zest of 1 lime
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup buttermilk (or milk with 1 tablespoon vinegar added)
  • 1/4 cup fresh lime juice
  • Optional: extra shredded coconut for topping

Instructions:
1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, lime zest, and shredded coconut.
3. In a separate bowl, combine the melted butter, eggs, buttermilk, and lime juice. Mix until well combined.
